Mini Molten Chocolate Cakes

6 oz. bittersweet chocolate (at least 60% cocoa)
1 cube butter (do not use margarine)
3 whole eggs
3 egg yolks
1 1/2 C. powdered sugar
3/4 C. flour
 
Melt butter and chocolate in a microwave safe bowl
(stirring until smooth)
whisk in eggs and egg yolks
Add flour and powdered sugar
(don't over mix)
 
Spoon batter into greased muffin cups
(silicone pans work best for this)
 
Cook at 400 degrees
time depends on the size of pan used.
for small muffin size, cook for 6-8 min
for large muffin size, cook for 13-14 min
 
*top of cakes will crack slightly when done...
do not overcook or the center won't be liquidy
 
sprinkle with powdered sugar or add a scoop of ice cream!
