Caramel Apple Cake

Mix: 4 cups shredded apples and 2 cups sugar and let stand for 10 minutes (gala or fuji apples are the best).

Then add:

• 2 cups flour
• 2 tsp.cinnamon
• 1 ½ tsp soda
• 1 tsp salt
• 2 eggs
• ½ cup oil
• 2 tsp vanilla
• ¾ cup walnuts or pecans (optional)

Bake: 350 degrees for 50 minutes. Top with caramel and whipped cream.

Caramel

• 1 stick butter
• 1 cup Karo syrup
• 2 cups brown sugar
• Bring to a boil then add
• 1 can sweetened condensed milk
• Bring back to a boil, take off heat and add
• 1 Tbsp vanilla
