BBQ Fatty

Ingredients

  • 1- pkg thick sliced bacon (12 -14 slices)
  • 1 pkg Jimmy Dean Original Sausage
  • ½ yellow sweet onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 8 oz. pkg cream cheese
  • 1 gallon zip loc bag
  • A few toothpicks

Directions

  1. Layout 6 slices of the bacon in a row
  2. Lift up every other piece of the bacon and lay another piece the opposite direction. Repeat this process lifting up the pieces that you did not lift up last time and place another piece of bacon in the opposite direction. Continue this until you have a square weave of bacon.
  3. Place the sausage in the bag and pound flat
  4. Cut open the bag
  5. Slice the peppers, and cream cheese in long pieces.
  6. The onion can be diced or sliced then cut into pieces depending on your preference.
  7. Place the slices of peppers, cream cheese and the onion onto the flat sausage. Be sure to leave room at each end and sides to allow you to roll it up.
  8. Roll the sausage into a roll, and pinch the ends shut. Place the sausage roll onto the weave of bacon.
  9. Roll the bacon around the sausage roll, tuck the ends in to it looks like a loaf. You can use toothpicks to secure the ends.
  10. Sprinkle with some season salt, bbq seasoning or simply some black pepper.
  11. Place the log on the grill and cook for roughly 1.5-2 hours or until the internal temperature of the middle is at least 165. This can also be cooked in the oven. Preheat your oven to 275 degrees, and cook for about 1-1.5 hours again, allowing internal temp to get to at least 165 degrees.
  12. Be careful not to try and cook it too fast or you will end up with burnt bacon and uncooked sausage.
