INGREDIENTS:
2 POUNDS LEAN GROUND BEEF
3-15 OUNCE CANS OF RED KIDNEY BEANS
3-15 OUNCE CANS OF PETITE DICED TOMATOES
1-6 OUNCE CAN OF TOMATO PASTE
1 CUP CHOPPED CELERY
1 CUP CHOPPED GREEN PEPPER
1 CUP CHOPPED ONION
½ TEASPOON OF MINCED GARLIC (FROM A SMALL JAR)
1 ½ TABLESPOONS OF RED CHILI POWDER
1 TEASPOON OF SALT
IN A LARGE PAN COOK THE GROUND BEEF, CELERY, GREEN PEPPER, ONION AND GARLIC UNTIL BEEF IS BROWN. COVER TO CONSERVE MOISTURE.
WHILE THE BEEF IS COOKING, DRAIN THE KIDNEY BEANS AND PLACE IN A STEW POT OR CROCK POT ALONG WITH THE DICED TOMATOES AND TOMATO PASTE. ADD THE CHILI POWDER AND SALT. IF YOU USE A STEW POT COOK AT MEDIUM HEAT. PUT THE CROCK POT ON HIGH.
WHEN THE MEAT AND VEGETABLES ARE DONE, ADD THAT TO THE STEW POT OR CROCK POT. STIR UNTIL MIXED WELL AND COVER. LET IT SIMMER FOR ABOUT ONE HOUR STIRING OCCASSIONALLY.
SERVE WITH CRACKERS OR CORN BREAD
