This recipe makes about 24 or 30 "churritos"
1 Cup of Water
1 Tablespoon granulated sugar, plus extra for dusting with some cinnamon to please your taste.
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1 large egg
1/2 ime or lemon
oil for frying
Step One
Bring the water, sugar and salt to a boil. Remove from the heat and beat in the flour until smooth.
Step Two
Beat in the egg, using a wooden spoon, until the mixture is smooth and satiny. Set the batter aside.
Step Three
Pour the oil into a deep-frying pan to a depth of about 2 inches. Add the lime half, then heat the oil to 375oF-old bread; t should brown in 30-60 seconds.
Step Four
Pour the batter into a pastry bag fitted with a fluted nozzle. Pipe 3-inch strips of batter and add to the oil, a few at a time. Fry for 3-4 minutes, or until golden brown.
Step Five
Using a slotted spoon, remove the churros from the pan and drain on paper towels. Roll the hot churros in mix granulated sugar and cinnamon before serving.
