4-8 boneless skinless chicken breasts
1 egg beaten- oil – 1 box cornstarch
1 green pepper cut up
1 onion cut up
Sauce: (I like to double the sauce)
4 Tbs. Ketchup
¾ Cup Sugar
½ Cup Vinegar
1 Tbs. Soy Sauce
1/2 tsp. Garlic Powder
Cut chicken into pieces. Dip in egg roll in cornstarch or shake in Ziploc baggie. In small amount of oil fry chicken until browned. Place chicken in shallow baking dish. Mix all ingredients for the sauce together. Pour over chicken Bake at 350 for 1 hour. Stirring every fifteen minutes half way through add cut up green pepper and onion.
Ham Fried Rice
3 Tbs. Oil
2 eggs beaten
½ cup diced ham
¼ cup chopped onion
¼ cup peas
¼ cup carrots
¼ cup green pepper
Or any other vegetables or mushrooms that you would like
4 Cup cooked chilled rice
3 Tbs. Soy Sauce
In a 10-inch skillet heat 1 Tbs. oil add beaten eggs cook until set. Remove egg and slice set aside. Add the remaining oil cook vegetables and ham until tender. Add egg and Rice. Sprinkle with soy sauce tossing gently to coat. Serve with sweet and sour chicken
